About Us
Landsby Wines is the passion project of a husband and wife team dedicated to producing premium, handcrafted wines from the heart of Paso Robles. Inspired by the Danish word for “village,” Landsby embodies the spirit of community, craftsmanship, and sustainability. Our wine is built on a shared love for the land and a deep respect for the art of winemaking.
The Winemaker
Oliver’s journey in wine began during high school summers in New York’s Finger Lakes region, working at Lakewood Vineyards. It was there that he discovered his passion—immersing himself in both vineyard work and the cellar. After high school, Oliver moved west to study Viticulture and Enology at the University of California, Davis.
Between 2011 and 2017, Oliver broadened his perspective and deepened his craft by working harvests across Spain, Australia, New York, Napa, and Sonoma. These formative experiences shaped his philosophy: great wine begins in the vineyard.
Oliver’s winemaking approach is minimalist and restrained, allowing the vineyard’s natural character—its soil, climate, and vines—to guide the wine. His goal is simple: to create wines that are honest reflections of their place and vintage.
